As the sun begins to set over Aruba’s coastline, Monforte III becomes an intimate dining setting on the water, where the evening unfolds in calm, golden light.

Guests are welcomed aboard with a glass of Prosecco as music drifts softly through the air and the schooner glides into the open sea. The atmosphere is composed and unhurried, designed for connection, celebration, and presence.

On board, our private chef prepares a four-course dinner served fresh throughout the evening, inspired by Caribbean flavors and crafted with care. Handcrafted cocktails and unlimited premium beverages accompany each course as the sky deepens into twilight.
